HHP-induced release of proteins by L. plantarum cells grown in mMRS- or mMRST80. The cells were grown mMRS medium without and with 1 g L− 1 Tween 80 and treated at different pressure levels (100/200/300/400/450/500 MPa) at 25 °C for 5 min or with heat (100 °C, 15 min). The protein concentration in the supernatant after pressure treatment was determined using the Bradford method. Shown are the means and standard deviations of at least seven replicates. Data pairs marked with an asterisk (*) show statistically significant difference (p < 0.05)
